Crafted by Zak, Karnage is a distinctive expression of Mauzac, sourced from Castelreng, near Carcassonne in the Languedoc region of southern France. Harvested on September 13, 2020, the grapes were directly pressed without destemming, allowing for a clean and vibrant profile. The wine underwent a slow fermentation over the winter, including malolactic fermentation, and was bottled without any additives on July 1, 2021.
