Spent the Last Dollar 2023 is a vibrant co-fermentation of Riesling and Chardonnay, bringing together the precision of Riesling with the gentle texture of Chardonnay. Sourced from the steep granite and limestone slopes of Baden and Mosel, the grapes are harvested and crushed together immediately, allowing them to ferment as one from the very beginning. The result is a white wine defined by freshness, mineral tension and quiet complexity.
Origin: Baden & Mosel, Germany Grapes: Riesling, Chardonnay Style: Fresh, light, and mineral white Year: 2023 Alcohol: 12% Production: 583 bottles Vinification: Hand-harvested grapes are crushed together immediately after harvest and co-fermented for a few hours before pressing. The juice is briefly exposed to open air to encourage aromatic development before ageing for 10 months on its fine lees in ex-Pinot Noir Burgundy barrels. Bottled with minimal oxygen exposure and movement to preserve freshness and stability. Fermented with indigenous yeasts, bottled unfiltered and unfined, with no additives.
Bright citrus, crisp orchard fruit and white flowers are layered with subtle leesy texture and a distinct mineral backbone. The careful élevage adds depth without sacrificing the wine's lively acidity and refreshing character.
Spent the Last Dollar is an elegant and effortlessly drinkable white that showcases the beauty of co-fermentation and restrained winemaking. Equally suited as an aperitif or alongside oysters, grilled fish, fresh cheeses and seasonal vegetable dishes.

WHAT TYPE OF GROWERS WE WORK WITH
OIur wines are a reflection of nature's truest form. We partner only with biodynamic vineyards—places where vines are nurtured with a reverence for the earth and a deep respect for natural rhythms. These vineyards view the soil not as a means to an end but as a living, breathing ecosystem. By working in harmony with the land, they cultivate wines that are as alive as the soils they spring from.
Our wines hold the pure expression of the vine, untouched by chemical interference and guided by the wisdom of traditional methods. Each bottle carries an honest snapshot of its origin: the seasons, the hands that tended the vines, and the character of the soil itself. These are wines with a pulse, honest and unapologetic, offering a taste of nature in its unaltered state.
