Scarabée is a unique collaboration between Brasserie Cantillon and Geschickt Kaefferkopf, bringing together the worlds of traditional lambic and Alsatian wine. Fresh Gewürztraminer grape pomace from Kaefferkopf is added to Cantillon's young lambic, where a second fermentation transforms the beer into a beautifully aromatic hybrid with remarkable finesse, structure and complexity.

The beer undergoes spontaneous refermentation in bottle, is unfiltered, unpasteurised and produced without additives.
Intensely aromatic, with notes of lychee, rose petals, white peach and citrus zest, balanced by Cantillon's signature minerality, vibrant acidity and delicate earthy funk. The Gewürztraminer brings floral elegance and texture, while the lambic contributes precision, freshness and a long, complex finish.
