Terroir & vinification: Les cailloux du Paradis, vines from 2008-2010, 40 hl/ha, The grapes are hand-harvested, destemmed, and gently pressed. Aged for 30 months in old barrels and one year in bottle. No fining, no filtration, without added sulfites.
