BiE Wild Riesling is a unique sparkling cider from De BiE Wild, combining organically grown apples with Riesling grape skins from Germany's Mosel region. The result is a cider that bridges the worlds of cider and orange wine, offering freshness, texture and aromatic complexity.
The cider undergoes spontaneous fermentation before spending two months macerating on Riesling skins. It is then aged on its lees for nine months and bottle-fermented to develop fine, natural bubbles without the use of commercial yeasts or unnecessary additives.
The nose shows crisp apple, citrus peel and white flowers, while the palate combines fresh orchard fruit with subtle tannins, lively acidity and delicate bubbles. Dry, refreshing and lightly textured, it offers the aromatic complexity of an orange wine with the drinkability of a cider.
An excellent aperitif and a great match for charcuterie, soft cheeses, seafood and lightly spiced dishes.
